The classical and traditional ham with the typical Westphalian flavour consists of the silverside of the pork leg. It is available as smoked or air-dried. Through 2-3 months of maturing, the ham develops a unique aroma, which is also very popular for gourmets, as it is especially recommended for hearty bread.
